Fukano is aged in White Oak and Sherry Manzanilla casks. It is made from 1/3 Koji rice and 2/3 Barley.

Koji is a fungus that ferments foods including rice and barley, the latter used for most whisky. This is uniquely Japanese. It is illegal to be called Japanese whisky if not made with Koji. Koji adds an umami flavor to whiskies.
