Established in 1889 it is 1/3 Koji Rice, and 2/3 Barley. They start out with Shochu, Ikiki Island is the birthplace of Japanese Whisky dating back to the 16th Century.

Since 1899 whisky has been made on the Island of Iki originally 55 distilleries winded down to 7. In 1984 six of them merged to become Ikinokura, producer of Ikiko. Using traditional methods. 

Japanese Whisky is made with Koji instead of yeast. Koji is fermented from rice. It adds an Umami sought after taste. Hakata established in 1912.
